Drumsticks with Mint Leaves and Honey

We had too many Thai food lately. I would like to do something different. We have some drumsticks in our freezer so I came up with this recipe.

  • 3 pounds chicken wings
  • 1 tablespoon minced garlic
  • 2 tablespoons chopped fresh mint leaves and Thai basil leaves.
  • 1 tablespoon butter
  • 1 lemon, juiced
  • 1/4 cup honey
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place chicken in two 9x13 inch baking dishes. Blend garlic and mint leaves and spread mixture under skin of chicken pieces.
  3. In a small saucepan, heat butter and honey over medium low heat; mix well. Then add lemon juice. Brush warmed mixture all over chicken skin.
  4. Bake for 1 hour, or until golden brown and cooked through (juices run clear). Brush again with honey mixture, and serve.
